Matcha is organic tea from Japan. Four weeks prior to harvest, the tea plants are covered to protect them from the sun. This boosts chlorophyll production in the plant, strengthening the flavour. The best leaves are then picked, wilted and steamed. When they are ready, they are ground into a fine, colourful powder.

Matcha is used in the official japanese tea ceremony. Prepared with water between 70 and 85ºC, it is whisked to a foam and poured into in a teabowl. The tea is whisked with a special Matcha whisk and measured using a matcha spoon, or Chashaku.
